“Mini Pot Pies” are quick, easy to make and you can use just about anything left in your fridge!
- 1/2 cup of Bisquick
- 1/2 cup of milk
- 2 eggs
- Put about 1 tablespoon in each cup of a muffin/cupcake tin.
In a separate bowl, mix together whatever "fillings" you want, such as browned hamburger meat with potatoes (think Shepherd’s pie!), cooked veggies with chicken or turkey (like chicken or turkey pot pies!), fried rice and BBQ pork, maybe pieces of ham and cheese or macaroni & cheese…
Add about 1/4 cup of each of the muffin cups, then top with one more tablespoon of the Bisquick mixture.
Bake at 375 for 25-30.
Some combinations can even be frozen and popped in the microwave for a quick snack!
